| TROPICAL CREAM OF FRUITS 2 1/2 cups of mango juice 2 1/2 cups of pineapple juice 2 cups orange Juice 1 calamansi 4 eggs 2 spoons cornstarch 1 bottle of nata de coco Preparation Beat eggs and put all ingredients in a pot and boil for 10 minutes constantly stirring. Put in a bowl and refrigerate. Serve cold in a glass and add 2 or 3 pieces of nata de coco. |

AUTHENTIC PUTO This recipe requires a rice mill and double boiler steamer Ingredients: 2 cups long grain rice 2 cups coconut milk 1-1/2 cups granulated sugar 3 tsps Calumet baking powder Salt to taste 1 package coconut flakes Direction: Soak rice in coconut milk for 3 hours. Grind into a flour consistency with the coconut milk. Add sugar, baking powder and salt, mix and pour into a 10 inch baking pan halfway, let it stand for 30 minutes. Meantime prepare your steamer until steaming and place pan for 1/2 hour or until cook. Test by inserting a fork, it if pulls out clean, then it's done. Remove from steamer, cool and set on a serving plate upside down. Sprinkle coconut flakes and serve. (Alternate roasted coconut flakes: On a very hot wok place a cup of coconut flakes constantly stirring and blending until fringes of coconut flakes turn brown. Remove and cool and sprinkle on the puto.) |
